Chef De Cuisine

The Chef De Cuisine is responsible for managing the culinary preparation and execution of Zesty’s in house curated food by following the vision and standards set by the Commissary Manager, Registered Dietitians and Culinary Management. The Chef De Cuisine direct the cooking process, monitors the kitchen and creates a strong team relationship.

 RESPONSIBILITIES 

  • Create daily and weekly logs for cooks and prep cooks in order to manage production
  • Menu design and recipe creation
  • Monitor facilities and equipment maintenance and condition
  • Ensure that kitchen operates alongside state and federal health and safety codes
  • Responsible for placing orders with vendors and adhering to a purchasing budget
  • Manage commissary staffing schedules
  • Uphold the high standards and vision of Zesty
  • Responsible for managing and inputting inventory including managing product rotation standards
  • Managing cleanliness and organization through Utilities and Stewards

REQUIREMENTS 

  • Chef De Cuisine should be passionate about healthy foods with a strong emphasis on quality, to provide the best consistent product to our customers and clients
  • At least 4 years of relatable cooking experience in managing high volume production
  • Must be physically able to lift, lower, push and pull objects up to 50 lbs. Unassisted
  • Must have the ability to follow oral or written instructions and directions
  • Must be able to work alone and work with a team
  • Must have 2 + years management experience in kitchens
  • Must have experience in creating recipes
  • Must have a current Servsafe Certification
  • Must understand and have a high level expanded knowledge of kitchen prep, grill equipment, knife skills, and ability to cook a high quality product with knowledge of meats and produce
  • Must have advanced knife skills
  • Must have experience in grilling, sauteeing, blanching and using a grill, stove, oven, steamer, mixers and other kitchen equipment
  • Passion for food and love for culinary
  • Catering Experience

NICE TO HAVE

  • Culinary certification or degree
  • Passion for health and wellness
  • Experience in production large commercial kitchens

 SCHEDULE

  • Monday thru Friday
  • Addition weekend work may be required
