Applicants must be 21+, have 2-3 years of current, high-volume kitchen management experience, Title IV Liquor and Food Handler Certification, reliable transportation, and a WINNING PERSONALITY! Assistant Kitchen Manager – The main responsibility for an Assistant Kitchen Manager of Pedal Haus Brewery (PHB) is to work with the Kitchen Manager (KM) to ensure the following: Guest satisfaction! They are responsible for ensuring perfect food is delivered to every guest, for every meal, and assist in building sales and profit. An Assistant Kitchen Manager should create a positive work environment, uphold the PHB culture, take ownership in the business, and strive to be profitable by doing what is best for our guests and our team. An Assistant Kitchen Manager for PHB needs a minimum of 2-3 years casual dining and catering kitchen management experience, the ability to multi task, motivate and lead others, a desire to serve guests, and a solid record of success. Experience with Windows and Microsoft Office based management reporting, Aloha Reporting and POS System, HotSchedules, and Inventory control are a huge part of what are looking for. We emphasize perfect execution of our existing recipes but also encourage culinary creativity when appropriate.  Someone who has the ability to create but understands the importance of systems is the ideal candidate.

Assist the KM in Taking Care of Our Guests:

• Recipe execution and adherence.
• Support and hold daily pre-shifts focused on food, cleanliness and safety.
• Manage and execute equipment maintenance and cleaning schedules.
• Train and ensure all team members maintain personal hygiene and uniform standards.
• Execute, coach and manage daily line checks, prep lists, par sheets, pull thaws and HACCP logs.

   Be a Coach:  

• Assist the KM with the hiring needs of kitchen team.
• Regularly meet and communicate with the KM and the Lead Line Cook positions.
• Assist the KM with the management of the BOH team to properly execute the PHB Experience.
• Provide daily feedback to all team members to create ownership in what they do and ensure continued growth and partnership.
• Assist the KM with conducting BOH team orientations, educating applicants on PHB’s culture and expectations including the influence our brewery operations have on our food production and menu execution.
• Assist the KM in directing the setting of prep pars to maximize productivity.
• Assist the KM with the completion of all BOH team evaluations in a timely manner.
• Ensure PHB’s policies and procedures are upheld.
• Participate in the certification of Lead Positions as BOH trainers and direct the cross training of kitchen positions among the staff.
